Corn Pudding
1/2 cup yellow cornmeal
1/2 teaspoon salt
4 cups milk
2 tablespoons honey
6 tablespoons brown sugar
1 teaspoon cinnamon
1/2 cup raisins

Heat milk to scalding. 
Mix cornmeal & salt and stir slowly into the hot milk until smooth.
Add Add remaining ingredients.  Bake at 300 for 1 3/4 hours.
Serve with cream


Raspberries & Honey
1 quart fresh raspberries
1/2 cup honey
Mash berries in honey until very smooth.  Chill and serve. 
Very easy and very good.  Makes a healthy topping for ice cream

 

Pumpkin Candy
1- 5 pound pumpkin
5 cups sugar
1 tablespoon baking soda
water

Peel & seed pumpkin.
Cut into 2"x4" strips.
Stir baking soda into enough water to cover strips.  Let sit 12 hours then drain and wash strips.
Drop pumpkin strips into pot of boiling water and cook until tender (not soft).
Remove and let strips crisp in ice water, then drain.
Mix sugar with 1 cup of water and boil 10 minutes.
Add pumpkin and simmer in covered pot until syrup is thick and strips are brittle.
Remove strips and let dry.

 


Elderberry Wine

5 lbs Elderberries

1 gallon cold water

3.5 lbs granulated sugar

1/2 ounce yeast 6 cloves

1/2 teasp ginger

Wash berries well, cook in a kettle with gallon of water until the fruit is tender then strain off juice into crock.

Add sugar and spices ,stir thoroughly and when

lukewarm, add yeast. Cover crock, store in cool place for ten days then strain and bottle.

Let sit for 6 months.

 

 

Sunflower Coffee

Save hulls of sunflower seeds when shelling. Brown hulls in skillet, stirring to prevent burning.

Grind the hulls fine and steep in boiling water for 3 minutes. Allow 2 teaspoons
