Crusty Cowboy Rib Rub
A North Pole West Recipe
Crusty Cowboy Rib Rub sounds like a honky tonk slow dance but it's actually a yummy western bbq rub that will give you a nice sticky finger-licking good crust.
This recipe coated 2lb of ribs with some leftover for next time.
2/3 c brown sugar
1/3 c white sugar
1/4 c instant coffee granules
1 1/2 tsp paprika
1 tsp chipotle (or chili)
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp dry mustard
You will note that I did not add salt to this rub. This is intentional. I would rather sprinkle it on after the ribs are cooked, if needed at all. I'm just one of those folks who has to glaze with bbq sauce in the final minutes of cooking to insure maximum lip sticky mess and that sauce, whether homemade with a ketchup base or store bought (and improved on), usually provides salt a plenty.
Here is the the glaze we used with our ribs:
Crusty Cowboy Sticky Lips BBQ Glaze
1 c chipotle honey bbq sauce (store bought from Sprouts)
1/4 c Jack Daniels
1/2 c molasses
3 tbs maple syrup
1 tbs butter (real butter)
Combine first 4 ingredients in small pot and let simmer gently on low for 20 minutes or so, just to get the flavors to come together then let cool a bit and stir in the butter. Let sit for an hour (if possible). Stir again just before use.
The chipotle bbq sauce is quite zippy and needed every bit of the added sweetness, the butter might seem an odd addition but it really does bring it all together.
Add a mini cowboy hat ornament and bandana and you've got a cute Christmas gift.
