Stoves are turnedoff and mixers unplugged as the entire sugar coated population of North PoleWest Baking District meets here at the Yee Haw Cafe to bravely face, The End. This happens every year. Spring and the coming of the illumination letters. As sure as the opening of the first rose blossom, someone in the “district”is opening the first gloomsday letter. The author of which, professes supreme knowledge and vision in statingthat there will be no Christmas this year, therefore, all efforts to createChristmas candy are in vain. The letters are all signed, Best Wishes, theGrand Illumination Society.Panic makes itself at home here until someone calls Santa at his popcornranch in Wyoming and he settles the matter by saying, If the sun does notrise tomorrow you don't have to make candy, until then, make candy.Then, Tequila Juan , the world's most fascinating man and undercover agent, iscalled back from vacation to investigate the hoax.I'll never figure why anyone would want to mess with a wonderful holidaysuch as Christmas, or why this only occurs when Santa is in Wyoming or why thelooming disaster only strikes a nerve within the sugar sector while others,like the toy making elves, only a few blocks away, go on oblivious to thethreat.(pictured, Tequila Juan in Hawaii)Could be possible, that if Christmas were not to come, the world wouldstill want toys, but the need for candy canes and chocolate frosted reindeercookies would be gone. Then confection elves would become extinct. Yikes!!!Guess everyone has a crack in their armor exposing a unique soft spot,plus, we all need to hold a hand sometimes. We ain't different. Just manyflavors of the same ice cream.In honor of Cowboy Santa declaring May 21st to be InternationalConfection Elf Day we offer up this treat from our sister city Obidos,Portugal, a magical place of beauty and wondrous desserts. Angel Breasts (delicate sweet egg cake in syrup)1 egg white5 egg yolks1 cup sugar3/4 cup water1 teasp lemon juice1 slice lemon peelPreheat oven 350.Butter 4 individual oven-proof custard cups.Beat egg white until it is stiff.In separate bowl beat the yolks until thick and lemon colored then gentlyfold in the beaten white. Divide into the 4 cups then place cups in baking panwith enough boiling water to reach halfway up the sides of cups.Bake for 10 minutesMeanwhile, mix remaing ingredients in small saucepan. Bring to boil and let boil vigorously for 5minutes until medium syrup forms.Pour a bit of syrup on 4 dessert plates, unmold the cakes on plates, thenpour remaining syrup over the tops of cakes.Cover and chill for several hours before serving. P.S. As far as Santa is concerned,Christmas is coming on time this year.]]></isc:description>

The comments just would not transfer correctly from the other site, however, I did go ahead and copy the content since the recipes are really worth trying. It's taken a about 2 months months, some candy cane throwing and several very not nice words, but the new site,as you can see, is up and running. There are still a few hitches in the giddy-up (kinks to work out) and more items and pictures to enter but on the whole we are feeling purdy darn good about it. I have worked me up an elf- size hunger. Being that much of the country is feeling the pre-Easter cold and snow ( that Easter Bunny is a real trickster), lets have one last happy belly of hot soup. Don't let the name throw you. This is really simple and delicious with crusty bread.Giddy-Up Garlic Soupserves 68 cloves really fresh garlic1/4 cup olive oil6 eggs (one for each bowl)1 teaspoon salt1 quart beef stocksoup bowlsChop garlic fine. Saute in oil until lightly browned (do not over-cook).Add beef stock and bring to rapid boil (soup must be hot at time of serving) To serve:Beak an egg in each bowl . Seems cowboys and elves operate by means of their own unique calendars (one of our many similarities).Today, visitors from all corners will be headed to town for this legendary western event. It’s not so much the rodeo they come for, but just to be here and join in the dance, taking in such sights as bucking horses mingling with flying reindeer, Santa stuffing himself with funnel cake and cowboys hobnobbing and story swappin’ with elves. And rarely does one get to see such a mixture of bells, boots and fringe as the “Sunday-best dress” Yippi Yi Night Ball where many a young elf’s fancy turns to love….and corney dogs. Most folks go for the love part but as for me, it’s all about the snacks. Okay, and the chance to wear my black and purple stove pipe cowboy boots. The word rodeo came from the Spanish word rodear, meaning “to encircle”.So, dear cowpokes, on this Yippi Yi Day, we hope you find yourselves rodeo’d with Love and chocolate.But, if you need a bit more fire in the furnace try this wild west treat….. Yippi Yi Chili Rellenos12 chili poblanos (roasted or canned)cooking oil½ medium onion, chopped fine1 clove garlic, minced½ lb. ground pork½ lb ground beef1 small potato, diced2 teasp salt ½ teasp pepper¼ cup raisins1 cup tomato puree6 eggssour cream To roast chilis: Broil or grill until skins are charred. While still hot, place peppers in plastic ziplock bag for 15 minutes, then remove skins.Slit on one side only and rinse out seeds. Dry on paper towels. If you like a milder pepper, soak them in salt water for 15 minutes then drain and dry again.Filling for chilis: Saute the onion and garlic in 2 tblsp cooking oil, add the meat, potato, raisins and seasonings. Cook for 10 minutes stirring often.Stir in tomato puree, simmer 15 minutes longer.Stuff chilis:Separate the eggs. Beat yolks until thick and pale in color. Beat whites until stiff , then fold yolks into the whites.(I know it looks like the long way about the barn to take em’ apart to put em’ back together but it works).Stuff chilis with meat mixture and roll in flour. Dip in the beaten eggs and fry in hot (365 F) deep fat (or frying oil) until lightly browned, turning once.Drain on brown paper bag or paper towels.Serve with sides of sour cream and salsa]]></isc:description>

But inside the café a dancing fire and the smell of soup with warm bread suppresses any urge to complain about the weather and instead, brings about a gentle sense of wellness that rests easy on the soul. There is no place quite like the ancient Yee Haw with its dark beams and rich aromas on a frosty day. Yesterday was Ground Hog Day and the town was all a buzz. Mr. Puxawhachahotney emerged from his dwelling, circled the Humdum tree, looked at his tail and declared that it was 11 months till Christmas. He then collected his Ground Hog Day gifts and consulting fee then quickly departed for his condo in El Boca del Cocoa. Albeit, there are still pine needles in the carpet, and the cat keeps showing up with tinsel, now that we know for sure it's a mere 11 months away we best start preparing for the 2011 Christmas holiday. Come on folks, what do we say every year come December? I can't believe Christmas is almost here…that was too fast…I'm not ready. Here are a few tried and true, easy little things that can be done starting now, that will allow for a little more free time come December. Get a notebook – one with pockets and keep it handy. During the year we always come up with great gift ideas. Aunt Belle will mention she would love an electric melonballer, or you stumble on a great recipe or an ad or website (like North Pole West) full of great ideas that you promise yourself you'll remember-heck! Forget remembering; jot it down in your Christmas notebook. Clip out or list those fav recipes you come across and stick em in the pockets. Read through your book around September and get a jump start on whatever you can. Buy smart- Great festive decorating does not have to be time consuming, or require a lot of extra time or shopping. During the course of the year when buying small décor items, while deciding on which whatnot to purchase, think if you can also use this item to decorate for Christmas. Need something to hold stuff?? Get a basket rather than a rack. Come December, tuck the stuff somewhere else for a while and use the basket to keep colorful bows and ribbons for wrapping. Throw pillows opt for ones with tassels on the corners. These can be made to look holiday special by tying some nice gold (or silver) bows on the tassels. Tight on kitchen cabinet space? If you need let's say, coffee mugs. Get some in festive colors that work in your décor. Come the holidays, set them out by the coffee pot. The look is inviting and colorful and frees up the cabinet for extra sugar and flour. When you purchase holiday decorations think the same way, only backwards (this is Elf logic at its best). Many Christmas decorations can be used on into the winter or for other occasions. A nice sleigh that can be dressed with holiday berries and greenery can in January be set on the porch, or by the fireplace for a cozy winter feel, and one less thing to put away. Tree ornaments also can have a separate life. If you know you are planning a chili cook-off party, don't put those hot pepper ornaments and lights away. Come party time use them as decorations. Get a few extra as prizes. Western wedding in the future? Keep those cowboy ornaments out for a fun engagement party. Boxes – If you're space challenged, get a few of those nice decorator boxes (Ross, Michaels etc…)they look pretty and give you a nice place to hold small Christmas items you purchase, or to hold ornaments in until the chili cook-off . It's a handy place to put all the little Christmas pieces you find behind the sofa after you put all the rest away (not blaming the cat of course). See, it's not so hard and it's also a fun way to keep Christmas around a bit longer. Wow, if you think about it (please try not to), that's almost like stretching time. Makes you feel kind of important now doesn't it? And so, dear time stretchers, next December when everyone else is running around in the cold and snow trying to cram 3 months worth of errands into a few days off, you will be sitting by the fire sipping hot soup and crunching on crusty warm bread. Here's a great, great soup for such a day. Superbowl Steelers Onion Soup Serves 6 In deep saucepan heat 3tbls bacon drippings Sauté in drippings 4 large onions sliced fine Cook on medium until soft Add 2tbls flour, ½ teasp salt, 1/8 teasp pepper, 1 clove garlic minced Cook until mixture is golden brown Add a sprig of parsley, pinch of thyme, 1 qt chicken stock, 1 cup dry white wine and simmer ¼ hour Add 1 tbls cognac To serve…… (the special part) Serve in individual ovenproof bowls First, in each bowl place 3 layers of toasted French bread, each layer sprinkled with grated parm. cheese. Then pour in soup, Top with more grated parm. And a tad of butter. Put under broiler until cheese melts and forms a brown crust. (even if you just pour it in a bowl and serve some crusty bread on the side, this is the tummy yummiest onion soup ever)]]></isc:description>

This could very well have been a season without peppermint had Santa not stepped in before it got too wild. ...There was all kinds of un-fun demonstrating going on as both of these groups went out on strike. There were no jokes, no treats no dancing. It was all very un-elflike. Tension was high and bitterness flew through the air like blowing snow. Then, out of nowhere,someone threw the first cotton candy ball. Geeze! Before we knew it the whole downtown was covered in a spun sugar web. The only thing that slowed them down was when they ran out of cotton candy, but one quick thinker ran to the front line with a bag of popcorn balls and it all started up again.Just as we were bracing for the worst ( a sugar shortage) Santa stepped in. Seems he read about the strike on the internet. He was a tad cranky about this. Seems he'd rather be told about such things in person. Go figure! We thought we were saving him grief by not telling him. It only took a minute to get to the truth. No one knew what they were fighting over. Then everyone got a slice of pie and went home happy and confedent that they had won.Funny thing about truth, for something that appears to be invisable, it is a mighty weapon. It must be magic.Magic PieRecipe for 2 pies2 single pie crusts1 1/2 cups raisins1 cup butter,softened1 cup sugar1 cup brown sugar6 eggs2 teasp. vanilla extract2 - 4 teaspoons ground cinnamon1 cup chopped nuts (walnut or pecans)1 cup flaked coconutPreheat oven to 450Line 2 pie tins with pastry (or if time is short use frozen pre made). Line crusts with double thickness of foil. Bake at 450 for 10 minutes. Cool on racksSet oven for 350Place raisens in small pot,cover with water; bring to boil. Remove from heat and set aside. In mixing bowl cream butter and sugars. Beat in eggs,vanilla and cinnamon until smooth. Drain raisens and stir into sugar mixture along with coconut and nuts. Bake at 350 for 30-35 minutes until set. The frenzy is right around the corner but the weather is so friendly to the soul that no Elf, regardless of rank, can help but play a round of Gourdball Frolic or Peppermint Lipsputter then grab a frosty one (or two) at the Jingle Bell BBQ Music Saloon . The work will be here soon enough, today we play. It was this little respite in duties that brought North Pole West Citys' Nutcracker Marching Band leader, Longhorn Jaun to my table yesterday. He said he had family in town staying at the World Market Store and asked if I would hitch up the sleigh and zip him on over for a visit. No problem.....I know Juan can't drive.World Market turned out to be a great place for fun and special Christmas items. The decorations were reasonably priced (some 2 for 5.00) and the Holiday food products would make for a special gift basket. Longhorn and I give this store a Two Christmas Mitten Thumbs Up!All in all, a joyful trip but for some odd reason Santa does not really care for unauthorized use of the sleigh. It looks like Jaun and will be doing dishes for a while. And he's not much help. Longhorn Tequila Juan’s Shortbread Lemon Bars 1 1/2 cups all purpose flour1/2 cup confectioners’ sugar1 teasp. grated lemon peel1 teasp. grated orange peel3/4 cup cold butter1 cup of eggnog (for consumption while cooking)Filling: 4 eggs2 cups sugar1/3 cups lemon juice1/4 cup all purpose flour2 teasp. grated lemon peel2 teasp. grated orange peel1 teasp. baking powder1 more cup eggnog (for consumption while cooking)Topping:2 cups (16 oz sour cream)1/3 cup sugar1/2 teasp. vanilla extract Yet another cup eggnog (for consumption while cooking) Preheat oven to 350While that pre-heats, consume eggnog & eat walnuts In food processor, combine flour, confectioners’ sugar, lemon and orange peel. Cut in butter until mixture is crumbly; continue to process until mixture forms a ball. Pat into a greased 13 x 9 x 2 inch baking pan. Bake for 12-14 minutes or until set and the edges are lightly browned. While that is baking consume eggnog & snack on pecans, do a little dance and… Combine the filling ingredients in a bowl (we tried a basket in the test kitchen, but that proved to be a bad idea, so stick with the bowl). Mix well. Pour over hot crust.Bake 14-16 minutes, until set and lightly browned. As that bakes combine the topping ingredients. Spread over filling.Bake 9 minutes or until topping is set...Cool on wire rack. Consume last eggnog….watch Frosty the Snowman and sing along. Refrigerate overnight. Cut into bars (not the same as visiting bars).Make 3 dozen ]]></isc:description>

After a season of using them at the grill maybe it's time for some new ones. You should have at least two in good order. This is also the time to stock up on those baking essentials as they come on sale. Brown sugar, light and dark, spices and flavorings of all kinds, pecans and flour. And now that I'm good and hungry and with not a chance of an elf cuddle in sight, my thoughts turn back to cheesecake. This recipes is one of the best. A jolly bit more work than normal but well worth it!Chuckwagon Cheesecake 1 cup butter, softened2 cups graham cracker crumbs1 1/2 lbs cream cheese, softened4 eggs, well beaten1 cup sugar2 teaspoons vanilla extractdash of lemon juiceTop layer:2 cups sour cream4 tablespoons sugar1 teaspoon vanilla extractPreheat oven to 350Make crust first by blending together the graham cracker crumbs and sugar then press into bottom of 9 or 10 inch springform pan.Blend together cream cheese, eggs,1 cup of sugar, 2 teaspoons of vanilla and lemon juice. Pour mixture onto the crust.Bake for 25 minutes (until firm).Cool 30 minutes.Preheat oven to Make top layer by combining sour cream with sugar and vanilla. Pour on cake and bake for 10 minutes (until just firm).Cool and refridgerate.Serves 12-15 (yeah, right. this is too yummy, folks will want more)]]></isc:description>

Yep! it's looking like a major sugar snowfall headed our way.When asked about the flour flurries Yee Haw manager Mr. Merryweather replied...Someone better clean this mess up!!!I decided it best not to pursue this line of questioning and went instead to our file of celebrity cookie recipes for a tasty gem to share with you.Wild Billy Hickok's Brandy Tea Cookies1/2 cup butter chilled 1 cup all purpose flour1 cup powdered sugar2 well beaten eggs 2 tsp. brandy 1/4 cup granulated sugar (for coating)Preheat oven to 425 Cut butter into flour, then add the powdered sugar, eggs, and brandy. Cover and chill 1/2 hour. When dough has chilled, measure by rounded teaspoons and shape into balls, roll tops in the granulated sugar and put sugar side up 3 inches apart onto lightly greased cookie sheet. Bake Bake about 5 minutes, or just until set. Remove immediately to cool on brown paper bag, when cooled place in air tight container.Great served with irish coffee.]]></isc:description>
