Cowboy Christmas Cooking Terms

On this page you will find a list of old cooking terms which you may or may not ever follow.  Please do not confuse "old cookin' terms" with the terms of the cook, which you must always follow and please never ever call the cook old. 

Talkin' the Talk

Coffee "A" or "C" Sugar- you may use brown sugar
Custard Kettle- double boiler
Firkin- (no I'm not kidding) a small wooden cannister for butter or lard
Gem Iron- muffin pan
Graham Flour- whole wheat flour
Indian meal- corn meal
Isinglass- gelatin
Loaf Sugar- refined sugar that has been formed into a conical mold, you may sub. granulated sugar
Nutmeg Melon- cantaloupe
Patty Pan- muffin pan
Poland Starch- use corn starch
Quick Oven- hot oven
Saleratus - sodium bicarbonate (baking soda)
